...when beef fajitas are a luxury

This post will be aimed specifically at beef fajitas so I will just mention in the beginning that the margaritas, chips, salsa, tortillas, rice, beans and service at most of the restaurants were also sub par.
We have a tradition of going out to eat on Friday nights mainly at a Mexican restaurant. We tried several based on recommendations and they were just not good. I guess since I have lived my whole life in Texas I am only familiar with beef fajitas that are made from skirt steak which are marinated, grilled, then sliced into strips and rolled up in a yummy homemade flour tortilla. I had no idea that other types of beef may be used and then shredded or maybe chopped up into little pieces and then fried up in a pan with no seasoning. The result is a plate of tiny pieces of rubbery brown "meat" with some onions and peppers. So I decided that the only way we were going to get decent beef fajitas (and salsa and margaritas) was if I made them myself.

After sharing my frustration with our neighbor he recommended a restaurant called Taco Mama.
Yep, no bull but there is more than food that matters.
It happens to be near the library so the kids and I went there for lunch after we visited the library. The chips and salsa were good. Then, I looked all over the menu for FAJITAS. Never found them so I asked the waitress and she said they had them but they weren't on the menu. I order "beef fajitas" and her reply is "do you want the beef shredded or ground". Dang! I had such high hopes. I asked if they have skirt steak that is marinated, grilled and sliced. She says yes we have steak. OK then that is what I will have. Then there is the whole french fry ordeal with Nick. He won't eat fresh cut fries. They have to be frozen. So I ask about that. The waitress goes off to check and then comes back and lets me know that they do have frozen fries. Yay! While we are waiting for the food I notice the wine list on the table. Cupcake Wine?! Really? I am guessing they don't sell a lot of wine.
They did have interesting fans.
After we finished our lunch, my conclusion was that they had good food all around but the particular waitress we had was pretty bad. I told JR about how good the food was and a couple weeks later he came with us. The food was still good but the service was even worse. So bad that JR informed me he would not come back. We did go back a month later only because we were at the library and hungry. We got the same waiter and he was still awful. The only good food in town and consistent horrible service! Back to making my own fajitas...if only I could find the skirt steak to make them.
I wonder what happens to the skirt steak part of the cows that go with all the other beef in the grocery stores. It can't be found ANYWHERE! I decide it is time to visit Weldon's Meat Market. It is a wonderful meat market. Well, wonderful other than they don't carry skirt steak. They were able to order it for me and a week later they called and said it was in. Whew. I go to pick it up and for 3 lbs it was $32. Yikes!
Some friends came through town to stop on their way home from Missouri and it just happened to be on the night that we had reservations to do the Purple Martin Tour on Lake Ouachita. There was only a McDonalds and Papa Poblano's (a restaurant we have never tried. It has a drive thru) on the way to the park. They suggested we try it. We pull into the parking lot which is mostly empty. (we didn't know it was the back of the restaurant) Bad sign #1. Then as we walk up to the building a door opens for us (the back door)and we walk in to be seated in the back of the restaurant. I will leave out details and just say WE FOUND IT! Our new favorite Friday night tradition. We have been back a few times since then and we even have a waitress. Mercedes. She is awesome.
Now I am in Texas for a week and plan to stock up and freeze some tenderized skirt steak from HEB. Glad the beef fajita thing is under control now.

Oh I almost forgot one more humorous part of the search for fajita meat.

I saw this in the paper so I called to see exactly what cut of meat this was just in case it was skirt steak. The conversation went something like this:
me"Hi, I was calling about the fajita ad in the paper. Can you tell me what kind of meat that is?"
him "It's fajita meat"
me "what cut of beef is it?"
him "ha ha ha, well I am not really sure, there's no telling"
me "ok thanks"
Really?! Sigh.









...you realize how much of your day WAS spent doing things that used internet.

I admit that I kind of knew when we made an offer on our dream home that Internet might not be as simple as we have known it to be for the past umpteen years that it has been known as DSL to us. THIS is the reason for lack of blog posts! Uploading one photo takes a LONG time. I will think what a great post I have but then I don't have the patience to post it. I am in TX right now in a house with wireless DSL. Ahhhhh.
As the time to move got closer I realized I had 2 choices: satellite Internet or wireless Internet. Neither one was cheap and neither one was going to allow us to watch Netflix or upload a bunch of photos. I was ok with that...I thought. After we moved in and got settled we found out it was a lot more than Netflix and uploading photos. It was all the stuff the kids played. They really have learned a lot from educational websites like pbs kids, poptropica, Webkinz, etc etc. 5G @ $50/mo. We let the kids play on thier websites and after a few days we had hit our 5G limit. Sadly, we don't let them play at all anymore because the Internet isn't fast enough to run the games and we don't have a big enough plan to support it. We do have plenty of other things to do so I just look at it that way. I never print anything anymore because that requires taking the computer into a different room and connecting the two with a CORD! In a few years I hope that technology will catch up to the country and we will have real high speed Internet again. Until then I will still put my best effort into posting but it might not be as often as I would like to.

...when you learn the hard way you need a tornado shelter

Many nights lately I have been irritated that my tv shows have been interrupted for hours so a weatherman can explain in great detail about storms moving through other parts of Arkansas. Yesterday afternoon I glanced up at the tv and noticed it was OUR part of Arkansas! Our neigbors Bob and Wanda called to check on us and invite us over to their storm shelter. A few minutes later we went and we are glad we did! JR was upstairs and actually saw the funnel cloud. We didn't get the worst of the tornado(s) but we lost some trees. This morning I drove a couple miles down the road and it looked like a bomb went off. Since we expect to be without power for at least a few days we bought something new!





My fabulous husband wired it to the whole house and we can't even tell the difference between generator and city power.

The past three weeks!

I have been keeping a journal of the past three weeks with the intent on starting this blog. I just had to figure out how to start a blog (with limited internet) first. So here it is! When you get to the bottom be sure and click on "older posts" because there is more. Enjoy!

The highlight today was being evacuated form Walmart. Bomb threat. Can't say that has ever happened to me before. I was escorted to my car by a policeman.

…you find the place where you need to get your drivers licence and it is called “Revenue Office”.

You walk in and there is no line. The lady that helped me was very nice and the guy that took my picture was just as nice and very helpful when I asked how to get new plates on all our vehicles. Then, while I was talking to him he whips out my new license! Texas can't do that!

Prograf

This one is for all my transplant mommy friends.

I called every pharmacy listed in the yellow pages and found one that said they could make Prograf. When I transferred the Rx they called and said they can't get the brand name. Ugh. There was one other pharmacy that said to call back and he would check and see if they could make it. I called (with only a few days left of Prograf) and it was a Friday and they were gone for the day and would be back Monday. I ended up ordering it from College Station and having them ship it. It wasn't cheap to ship it with an icepack. I did call back the other pharmacy on Monday and they can make it! Yay! Next month will be better!

…you are eating at a restaurant and realize that they didn’t put the usual end of the deer on the wall! The kids loved that one!




…your neighbor has the cutest baby ever! I didn’t take these pics at the time of day that I wanted to but I had to share before the baby gets too big.









…your husband comes home with tales of people he meets while he is on the right of way that make you crack up. I told him he needs to start a journal.

He has started a journal now so I will post them as he tells me about them. Here is the first one:

Last week he was in northern Arkansas and he came across a little old lady and they needed to move her car. They got to talking about the weather and about how cold it was. The sweet little old lady then told him "it's because the world is coming to an end...God can come down and wipe us out at anytime. So you better be right with the Lord or you will burn on a lake of eternal flames". JR replied "Yes ma'am. Pleasure meeting you. Gotta go."

…you go to the local post office(not just around the corner)to figure out how and where you can install a mailbox and it is closed for lunch from 12-1





…your daughter’s new favorite beach does not include the Gulf of Mexico.




...you can dine at a restaurant on a lake and see the bottom!







They even had a machine to buy fish food. Nick LOVED this restaurant. Everytime we cross the lake he asks if we can go to that restaurant.

…your daughter asks “why can’t I say “ain’t”? All the kids in my class say it!”
